BAKED
CHOCOLATE PUDDINGS
Serves 6
125g chocolate
¼ litre hot espresso coffee
350g chocolate
125g butter
6 eggs, separated
200g caster sugar
100g groung almonds
100g rice flour
In chocolate’s early
days, it was thought of as a kind of Viagra, and frowned upon by many
monks and religious groups, who regarded it as sinful food. Perhaps it is
a sin, but there’s no doubt it’s a brilliant tool for seduction.
Make the centre first: melt the 55% chocolate with the coffee, then pour
into a small container and freeze. Melt the 70% chocolate with the butter,
and whisk the egg whites with the sugar until firm. Fold the yolks into
the cooled chocolate mixture, then add the almonds and flour. Finish by
carefully folding in the egg white mixture. Place six small pastry rings
on a baking tray and line them with baking parchment. Spoon the mixture
into each ring’s base, then push in a small piece of frozen coffee and
chocolate. Cover with the rest of the mixture. Bake in a preheated oven.
Remove carefully from the rings. Serve with coconut ice cream.
